Chopped PEPPADEW® Mild Piquanté Peppers and baby marrow quinoa salad

Cooking up a spicy storm with delicious PEPPADEW® Piquanté Peppers has never been easier and now you can add a bit of zing and pizazz in the kitchen thanks to this epic range.

This yummy Quinoa salad is tasty and healthy and makes a great work lunch as well and can also be a veggie option too.

Serves 4-6

Ingredients

4 cups hot vegetable stock

2 cup Quinoa

350 g baby marrow, grilled and sliced

100g PEPPADEW® Mild Piquanté Peppers Chopped

200g Green beans, diced and blanched

80 g pine nuts, lightly toasted

60g red onion, diced

1 tsp garlic crushed

2 tbsp lemon juice

1 cup basil leaves

Method

Pour the hot stock over the Quinoa and cover for 10 minutes.

Add the baby marrow, green beans, PEPPADEW® Mild Piquanté Peppers Chopped, pine nuts, red onion garlic and lemon juice, mix well.

Add the basil leaves roughly torn to the salad and serve.

Chefs tip: add grilled chicken strips for a meat option.
