Bailey Schneider’s Cauliflower Pizza Recipe
Her favourite dish? A cauliflower pizza, and Bailey shared her recipe with us…
Cauliflower Rice – either grate heads of cauliflower or pop them into a food processor (or buy the Woolies packet – I use the whole packet.)
1 cup of grated Mozzarella cheese.
2 Tbsp of Parmesan cheese.
1 large egg.
Salt & Pepper.
Baking Paper & Baking Tray.
“You can use whatever you want really. Be as classic or creative as you like. I went classic.” She says.
Sugar free tomato paste
Herbs – oregano.
Pre-heat the oven to 170 degrees Celsius.
Steam the cauliflower. Allow it to cool down as you don’t want it to melt the cheese.
Once it’s cool to the touch, add your cheeses, egg and salt and pepper.
Smoosh it all together. The fun is getting your hands dirty.
Smooth the cauliflower mixture as thinly as you can, without leaving in gaps onto the baking paper and baking tray.
Bake in the oven for 15-20 minutes and keep checking it doesn’t burn.
It should go a little golden and crisp (if it’s thin enough.)
Leave it to cool a little and then add your toppings.
I smeared some tomato paste on, scattered salami, olives and cheese all over.
Try to make it back to your oven, before you eat the toppings off… Place it under the grill just to melt the cheese.
