Nicola’s recipe

Nicola likes to keep it simple. Here’s one of her favourite, easy-to-make recipes.

‘You’ll need a packet of penne (the best quality you can find), two blocks of creamy blue cheese (approx 500g) from Woolworths (this is a rich dish), 500 ml cream, one packet of Italian parsley roughly chopped, salt and freshly ground black pepper.
Serves  6 to 8.

Pop blue cheese (chopped a little) into cream and heat on stove, watching until melted. Reduce until thickened. Season to taste with salt and lots of black pepper.
At the same time prepare pasta to your taste … I like it with a spring in it and not soggy. Drain well and toss into sauce. Pop onto heated serving platter and sprinkle with chopped Italian parsley. Serve with salad and a crisp ice cold bottle of chardonnay. Divine!’
